Seasonal Flavors of Tea Change

The winter wind has finally started to blow in New Jersey. My taste for tea’s have changed from a nice citrusy iced tea to now a spicy warm chai. The spices in the chai tea warm up the chi in the body and seem to keep the immune system in good health.

8 cardamom seeds

8 cloves

4 black pepper corns

1 inch fresh ginger root

2 cups Coconut milk

4 tea bags of black tea(Darjeeling) or Green Tea

Honey or sugar to taste

Directions

  1. Place the cardamom, cloves, and peppercorns in a resealable plastic bag and crush with a heavy skillet.
  2. Place the crushed spices in a medium saucepan, along with the cinnamon sticks, ginger,coconut milk, and 2 cups water; bring to a boil. Remove from heat, add the tea bags, cover, and let steep for 10 minutes.
  3. Strain into cups. Sweeten to taste.
